Bar Domani: Shaping the Future of Hospitality at Piano35

Some events fill a room. Others open up space—and minds. Bar Domani belongs to the latter. From May 9 to 13, the team at Piano35 turned the bioclimatic greenhouse atop the Intesa Sanpaolo skyscraper in the heart of Turin into a vibrant hub of dialogue, vision and exchange. Five days, dozens of international voices, and one shared goal: to reimagine the bar through the eyes of those who live it every day.

What lingers isn’t always loud. Sometimes it starts with the quiet of a guest settling in, of someone tuning in. At Bar Domani, the room listens, responds, takes notes, asks more. Here, the bar is not just service—it is culture, language, responsibility. And beauty, too. A space for ideas and awareness.

This May, Piano35 welcomes a global community: bartenders, educators, journalists, entrepreneurs and forward-thinkers gather high above the rooftops of Turin to share perspectives on mentorship, artificial intelligence, off-radar venues, and the future of hospitality. Experiences will be shared, questions pose, boundaries redraw. Together, guests will toast not just to what the bar is, but to what it can become.

Inside the Format

Set within Piano35—the panoramic restaurant and cocktail bar led by chef Marco Sacco, shaped around three principles: good, beautiful, and simple—Bar Domani takes its place at the intersection of culinary expression and cocktail culture. With Simone Sacco at the helm of mixology, the venue blends a refined kitchen with a bar driven by research and perspective.

This is where Bar Domani found its home: an initiative built to ignite dialogue among hospitality professionals, and designed to reflect the changing shape of the industry.

At the heart of it all is Bar Manager Ansony Murcia, whose vision is rooted in a line from philosopher Hans Jonas: “Act so that the effects of your actions are compatible with the permanence of genuine human life on Earth.” It’s a phrase that’s stayed with him since his days in architecture school. “Thinking about acting without harming others should be obvious,” he reflects, “but in the rush of our society, it often isn’t. In many ways, our sector still lacks a sense of responsibility.”

That’s why Bar Domani goes deep. Speakers from Madrid, Dubai, Bangkok and Oslo joined voices from across Italy, bringing discipline and detail to the conversation. From Angelita and Devil’s Cut in Madrid to Bulgari Hotel Dubai, Himkok Oslo, and Mahaniyom in Bangkok, to Jeffer Pisa, Ceresio 7 Milan, Radici Asti and Zoppi Distillery Turin—each brought a vision shaped by both global perspective and local roots.

Coqtail Joins the Conversation

On May 12 and 13, the conversation will hit its stride as Coqtail co-founders Penelope Vaglini and Chiara Degl’Innocenti take the lead, curating a series of talks with clarity and drive.

On the 12th, from 11:30 to 1:00, Vaglini will moderate a session on The Power of Mentorship in the Bar Industry, joined by Ronnaporn Kanivichaporn (Mahaniyom, Bangkok), Andrea Villa (Italian Coffee Champion) and Paula Garcia (Barra Mexico).

Later that afternoon, from 2:00 to 3:00, Degl’Innocenti will host a roundtable on Labour Conditions in Italy’s Bar World, featuring Abi El Attaoui (Ceresio7, Milan) and Daniela Garcea (Cordusio Spirits), diving into themes of sustainability, balance, and the human stories behind industry growth.

On May 13, Vaglini will return to lead a conversation on The Impact of AI on Gastronomy, once again joined by Kanivichaporn. Meanwhile, degl’Innocenti will moderate a session on The Value of Small Bars Outside Major Cities, with perspectives from Jeffer Pisa, Radici Asti, and Azotea Torino.

Each talk will be designed not just to inform, but to invite—blurring the line between speaker and audience to create a space of true exchange.

Lab Space and Global Shifts

But there’s more to come. Between talks and roundtables, Piano35 will become a living lab—with masterclasses by Mezcaleros Italia and Zoppi Distillery, tastings, prep sessions, and nightly guest shifts featuring names like Himkok and Mahaniyom. “Our goal is simple,” says Murcia. “To give voice, to support, and to inspire the next generation to imagine new concepts of beauty and awareness.” Five days. One space. A shared future.
