On June 22, the rooftop of Alto becomes the stage for the launch of Listening, the fifth issue of Coqtail – for fine drinkers, marking the opening night of the Alto Cocktail Festival. At the top floor of Villa del Mare Spa Resort in Cervia, cocktails, music and print come together in an event where content meets atmosphere. The Festival bears the signature of Niccolò Amadori, Bar Manager with a global mindset and a clear vision of what hospitality at the bar should mean today. Meanwhile, Coqtail takes over the rooftop with an editorial compass defined by attentive listening, observation and elevated mixology.
Listening, a New Issue on the Soundtrack of the Bar World

The evening of June 22 kicks off five days of Alto Cocktail Festival, a gathering that brings together mixology and cuisine through guest shifts, pairings and shared perspectives. To open the event, Coqtail – for fine drinkers presents its latest issue, Listening, entirely dedicated to the presence of music in the bar experience. A theme that flows through the rhythm of the night itself, from the bar service to the musical selection.
From Japanese listening bars to high-fidelity systems, from carefully curated playlists to the deliberate use of silence, the magazine explores how sound shapes the atmosphere, the mood, and ultimately the quality of time spent in a venue. A journey across styles and intentions, united by one ambition: to explore what happens when one truly starts to listen.
Cocktails and Rhythm on the Rooftop at Alto Cocktail Festival
In the background, a drink list crafted by Niccolò Amadori unfolds, where ingredients and techniques enter into thoughtful dialogue, enhanced by brands that share technical precision and stylistic clarity. Among them: Altamura Distilleries, Amaro Lucano, Aperol, Bonollo 1908, Bulldog, Campari, Bottega Cinzano 1757, Cynar and Espolòn Tequila—all helping define a carefully composed experience, where every spirit is chosen to elevate the cocktail’s character.
Five serves encapsulate Amadori’s idea of summer—balanced, rhythmic, and rich in meaning. Soda d’amare blends Cynar, OF Dorange Bonollo, Aperol, lemon and soda. Cocomeroni is a nimble twist on the Negroni, mixing Campari, Bottega Cinzano 1757, Altamura Vodka and watermelon juice with bright bitter-fruity contrast.
Fior di fragola takes a more layered path, featuring Bulldog Gin, lacto-fermented strawberries, strawberry liqueur, Bottega Cinzano 1757 and fake lime—completed by a milk-washing technique. Then comes Tequila y soda, a long and dialed-in serve of Espolòn Tequila, ancho chile, and guava–grapefruit soda. And for those going zero proof, there’s Notte Lucana: Amaro Lucano Zero, cold brew, and citrus cordial in an alcohol-free cocktail that still runs deep. Four variations, one direction: bringing meaningful content to the counter.
A Rooftop Designed to Turn Up the Volume at Alto Cocktail Festival

Alto Rooftop is the result of a deliberate choice. After years between Sydney and New York, Amadori returned to Cervia with the intention of shifting the narrative. Gone are the Riviera clichés of mindless nightlife; in their place, a thoughtful, well-crafted approach to mixing for those who value precision over improvisation. A bar built on respect, driven by substance.
It’s the same ethos that defines Coqtail – for fine drinkers: giving space to those with something real to say, making sense of the people, gestures, and places that shape the bar world. No slogans, just conversations that linger. Like the evening at Alto: it begins with the right light, grows through what’s worth sharing, and ends with the feeling that you might want to stay just a little longer.
