Coqtail – for fine drinkers Takes Over the Grand Hotel Principe di Piemonte with a Toast to Tuscany

The Grand Hotel Principe di Piemonte sets the stage for the launch of Sundowner, the fourth issue of Coqtail – for fine drinkers. On May 14, resident Bar Manager Simone Corsini will be joined by Fabio Fanni of Locale Firenze and Edoardo Sandri from Atrium Bar to raise a glass to Tuscany’s drinking culture—where sea views, signature serves, uncompromising hospitality and quality reading all come together in style.

In Viareggio, there’s one place where the sunset seems to linger just a little longer. From a terrace that floats somewhere between Art Nouveau and the sea, cocktails become vessels of elegance and hospitality. And it’s here, at the Grand Hotel Principe di Piemonte, that Coqtail – for fine drinkers has chosen to celebrate its fourth edition with an aperitivo-inspired evening designed for those who see mixed drinks as a way to connect, exchange ideas, and toast to the stories behind every pour.

On May 14, the hotel’s terrace will take on two distinct souls—each telling a different tale of Tuscany in a glass. At the top, on the Terrazza Maitò, Simone Corsini will take the lead with two of his signature classics. One floor down, poolside, in a specially curated space, two standout guests from Florence, Fabio Fanni, Bar Manager at Locale, and Edoardo Sandri, Assistant F&B Manager at the Four Seasons’ Atrium Bar, will share their unique take on the region. Three talents, two levels, one unmissable occasion to savour the very best.

The Principe—as it’s fondly known—is a place of memory and grandeur, lovingly restored to its Belle Époque splendour. Now part of The Leading Hotels of the World collection, it boasts two Michelin stars at its fine dining restaurant Il Piccolo Principe and has terraces that serve as sanctuaries for well-travelled drinkers. Simone Corsini, formerly part of the Four Seasons Florence’s team, runs the bar with a quiet elegance. Each cocktail is a liquid postcard, each detail a new perspective on Versilia.

For the occasion, Corsini is presenting two signature serves for Coqtail. Via con il Vento is an herbaceous, golden twist built around OF Dorange by Bonollo 1908, verbena and honey. Stai Tonico is a brisk, aromatic blend where Cinzano Vermouth Rosso 1757 meets timut pepper and basil. Both are designed to echo the rhythm of the sunset—and to linger in memory long after the evening fades.

From Florence, for Coqtail’s Celebration

From nearby Florence come two bartenders who’ve reshaped the city’s drinking landscape. Fabio Fanni, the creative mind behind Locale, brings Caterina—a Cynar highball with artichoke soda, vibrant in green tones and vertical flair—and Cardinale, where Campari and fino sherry meet a bold olive distillate. A drink of sharp precision, where every note finds its place.

Edoardo Sandri, leading the Atrium Bar, will serve Folies Bergère, a smoky tropical cocktail made with Altamura Vodka, an American-style aperitivo and banana, and the Atrium Spritz, where Aperol meets fermented mango soda—raising the bar on the Italian classic. Their stations will be located on the lower level terrace, completing the experience with a panoramic view of Tuscany in a glass.
