Identité Brings the Mediterranean to Le 300 at the Maybourne Riviera

High above the Côte d’Azur, Le 300 – the cocktail bar of the Hotel Maybourne Riviera – has introduced Identité, a menu that distils the character of the Mediterranean into nine finely tuned serves.

The Maybourne Riviera rises on the cliffs of Roquebrune-Cap-Martin, its terraces looking down towards Monaco and out across the waters to Corsica. From this height—three hundred metres above the shoreline—the sense of the Mediterranean is immediate. It is in the light, the wind, the scent of the sea. Le 300 borrows its name from this perch, and now, through the vision of head mixologist Julien Lecharpentier, its drinks are equally bound to the landscape.

Lecharpentier, who has long been drawn to herbalism, took the plants of the Riviera as a starting point and allowed the idea to expand. The collection travels further east and south, gathering ingredients and inspirations from Greece, Turkey and Morocco. Identité is conceived as a journey: nine cocktails that express the variety and depth of the region’s flavours.

The list opens with Olea, a Margarita seen through Mediterranean eyes, built with silver tequila, mezcal, olive distillate, bergamot rosolio, strawberries and a touch of olive oil. Salvia gives the Dry Martini a new texture, enriched with vodka, vermouth and butter infused with sage leaves. Helios recalls the Manhattan but shifts the balance with Scotch whisky, Corsican Moscato, osmanthus, brown butter, peach vinegar and dried apricot. Il Dolce plays between an Espresso Martini and a tiramisu, clarified to a silky finish with rum, coffee liqueur, cold-brew coffee, Corsican Moscato, vanilla and biscuit.

Two final chapters underline the breadth of the menu. Fystiki offers a Mediterranean take on the Gimlet with gin, vermouth, pistachio distillate, orange blossom and toasted pistachios. Geranium, described as “a twist on the Lychee Martini, without the lychee”, is built on gin, vin de pêche, verjus and geranium leaf, clarified for crystalline precision.

Sustainable Details

Even the menu itself has a sense of place. In line with the bar’s eco-conscious approach, it is printed on algae a small gesture, but one that grounds the experience in the present moment.
