At Sulià House Porto Rotondo, the cocktail menu reads like a love letter to Sardinia—its history, its land, and the raw ingredients born of its sun. Conceived by Fabrizio Guaglianone, the 22-drink collection spans every occasion, from aperitivo to after-dinner, with particular care given to non-alcoholic serves.

To honour Sardinia means working with local distillates, wild herbs, and the fruits and botanicals that thrive under the island’s light. Hence creations like Oro Rosso, made with orange liqueur, orange water, and saffron gin; or Terra Sarda, built around green myrtle and Sardinian gin infused with chocolate mint. Red myrtle takes the stage in Bacche & Radici, where it meets bitter, orange liqueur, beetroot, egg white, and a red-fruit shrub.

Coffee and wine traditions also find their way into the glass. Caffeáju blends Sardinian vodka, coffee liqueur, coffee syrup, a touch of Vernaccia, and almond foam. That same Vernaccia, distilled into grappa, returns in the Elixir di Vernaccia—a warm digestif of grappa and chamomile honey. And the list goes on, each drink anchoring a chapter in Guaglianone’s Sardinian narrative.

A Cocktail for Every Moment

The menu is divided into four sections: Aperitivo, All Day, Digestivo, and Virgin. Each speaks to a particular time of day—except for the Virgin offerings, designed for any hour. Guests can choose among four appetite-sharpening aperitivi, four after-dinner serves, six versatile all-day options, and eight refreshing, alcohol-free recipes.

Among the latter: Virgin Ricordo di un’Estate, with melon, strawberries, lime, elderflower syrup, and tonic; Virgin Orto Fizz, where cucumber and green apple shrub meet apple cider vinegar and Mediterranean citrus tonic; and Virgin Ortaggi di Sole, a blend of citrus, vegetable-broth syrup, carrot juice, and orange.
