The aperitif is a universal pleasure. It is a symbol of Italian culture that combines taste with conviviality. As a brief escape from hectic daily life, over time it has evolved to explore new pleasures for the palate. The usual pizzas, chips and olives now make way for the new star of avant-garde finger food: BluRhapsody 3D printed pasta.

Delicious bites of durum wheat semolina and water, combined with specially designed toppings, are redesigning the future of one of the Italians’ best-loved foods, representing a true revolution in pasta production. «Research, technology and the quality of raw materials blend with the elegance of the refined style of more than 30 BluRhapsody shapes that, in their modernity, narrate the art of pasta in its finest form », the manager continues.

New shapes and textures

Versatility is also an integral part of BluRhapsody’s soul. «There are unique shapes and textures created through 3D printing that command attention and surprise the palate. This versatility is achieved by the 3D printer that portions perfect one bites; that is, morsels of fresh pasta that weigh between 5 and 7 grams when dried. In traditional production, the dough is extruded through a die and then cut with specific blades that determine its shape. With 3D printing, all this is revolutionised. The pasta, a Spaghettino No. 3 to be exact, is made by extrusion directly in 3D, in a matter of minutes. Then this same Spaghettino alone creates the entire shape that was fed into the machine. So, it is versatile in design, but also in flavour. Right from the first bite you can already perceive, in an explosion of flavour, all the intertwining of the shapes», says Parravicini.

BluRhapsody, how is it made?

BluRhapsody is 100% Italian durum wheat semolina and water. In keeping with tradition. Two ingredients that guarantee all the taste of great pasta. «For some shapes we also use 100% natural colourings, such as squid ink, spirulina, beetroot, radish extract or carrot, which help us to make our shapes even more realistic without altering the taste. Because BluRhapsody is also to be eaten with the eyes», continues Valentina Parravicini.

Pairing Tips

Different shapes and colours bring to mind the Rubik’s Cube, evoking the idea of a classic pasta with vegetables.

In the book “The Usual But Better”, published in June, the chef and gastronome Beatrice Guzzi, who collaborated on developing the 30 dishes together with BluRhapsody, describes how each of the 3D pasta shapes, photographed by Roberto Savio, blend with the flavours of the various fillings. Here are a few examples.

The BluRhapsody 3D Cube is recommended with sausage, savoy cabbage and chilli and paired with the king of cocktails, the Dry Martini. The delicious Mushroom can be filled with a cream made from mushrooms, gorgonzola and pears to be enjoyed while sipping a Negroni. While for the Venus, a filling that enhances the shape is recommended. Inside the shell, on a potato cream, a sautéed prawn and a few leaves of rocket enrich the whole mouthful. And to drink? A sophisticated champagne. Now, the only thing remaining is to be inspired by the condiments and cocktails: BluRhapsody takes care of the pasta.
