It has been well over a decade since Asia’s cocktail scene stepped out from the shadow of Western bars and took centre stage on the global mixology scene. Thailand has played a key role in this rise, now standing as an essential reference point in the industry.
A Vibrant Bar Scene
Few understand this evolution better than Patty Pitchaya, a Bangkok native with an authoritative perspective on the art of eating and drinking well. “I’ve been part of the food industry for almost twenty years,” she says, “and today I work as a food consultant and food designer.” According to Patty, Thailand’s bar scene is dynamic, vibrant, and constantly evolving. “Bangkok offers something for every taste — underground speakeasies, concept-driven bars, and luxurious rooftop venues with breathtaking views. But bar culture isn’t confined to the capital alone.” Cities like Chiang Mai and Phuket have developed lively and original bar scenes, showcasing local ingredients and innovative mixology. Given the chance, Patty recommends exploring beyond Bangkok to discover how different regions put their own unique spin on the drinking experience.
Patty Pitchaya’s Clear Vision
With her adventurous spirit, Patty Pitchaya has developed a clear vision of what makes a bar truly special. The quality of cocktails is essential, and that “excellent food is always a plus, whether it’s a carefully curated small selection or a full menu.” She also highlights the importance of small yet meaningful details: “Something as simple as offering free water reflects a level of care that enhances the overall atmosphere. Because it’s not just about where you go — it’s about how a place makes you feel. It’s about achieving the perfect balance between high-level drinks, great food, and warm hospitality.”
The Power of Human Connection
When it comes to hospitality, Patty Pitchaya is particularly passionate: “At the heart of every great experience are the people. The staff sets the tone through the way they treat guests, but the energy of the customers is just as important. Whether you’re having an intimate conversation or meeting new people, the best nights are the ones where conversations flow effortlessly. A bar succeeds when you feel welcomed, connected, and completely at ease.”
Two Emerging Trends on the Rise
If these characteristics form a fundamental common thread, Patty sees two major trends shaping the future of the bar scene. The first is the rise of neighbourhood bars with a homey atmosphere. “People are looking for spaces where they can escape their daily routine while still feeling completely at ease,” she explains. “A relaxed setting gives them the chance to find a quiet corner — whether in the afternoon or evening — where they can unwind, socialise, and enjoy themselves.”
The second emerging trend? Hybrid bars — a concept Patty believes is poised to take off in a big way. “These are the places I like to call hybrid venues. Bars that start the day as intimate cocktail lounges and seamlessly transition into high-energy nightlife spots as the evening progresses. These concepts offer the best of both worlds: an elegant, laid-back space for sipping well-crafted drinks early in the night, and a vibrant, dynamic setting for letting loose later on.” Patty Pitchaya is convinced that these two styles of bars are set to become the next big thing. “Consumer tastes are evolving towards more immersive and versatile experiences,” she notes, and bars that adapt to these shifting preferences will lead the way into the future.
